Serving temperature

Serve this beer between 7°C and 10°C; stick it in the fridge for 90 minutes.

Flavours to expect

Well… this one is tricky. It’s a hybrid. A table saison? A farmhouse session IPA? Who knows where the balance will fall between funky and fruity? There’s Vienna malt in the grain bill, but I don’t know how much. There’s a Dupont yeast in there, but I don’t know how much. It’s double hopped with ‘an international array of our favourite hops’, but I don’t know which ones they are… Gordon says in the video (link below) that it’s funky, floral and light with a slight apple aftertaste. That sounds delicious. Beyond that, I’ll guess we’ll just have to wait and see.

Food pairings

This one’s going to be tough… Perhaps a light goat’s cheese salad. I’m picturing pea shoots in there, perhaps a little celery. Or perhaps a pate might work – something rustic and farmhouse to go with the funky side of the beer while it’s meaty nature plays up to the IPA side too. I had some hummus made with caramelised onions the other day which was very nice. That could work too, with it’s mixture of sweetness with a slight sharp note too.
